Caramel apple with caramel cream cheese frosting and caramel sauce, pumpkin spice with brown sugar cream cheese frosting, dark chocolate with white chocolate peppermint buttercream, and chocolate hazelnut with hazelnut buttercream and Nutella drizzle—just a few of the cupcake flavors at Sweet Cake Bake Shop.

The creative concoctions aren’t the only reason to visit the bakery. What makes it unique is that every item is gluten free and, according to the bakery’s Facebook fans, tastes “yummy.” The bakery even has requests from places like Chicago, Florida, Alabama and New Jersey.

Providing gluten-free baked goods to consumers is more than a mission—for owner Allison Regan, it’s personal. In 2002, she was diagnosed with celiac disease and was confronted with relearning what to eat. “Step by step, year by year, the more I tried the more I learned. And the more I learned, the more creative I became. I began feeling so liberated by all the new options I had rather than focusing on what I couldn’t have. I finally felt like I was in control, and didn’t feel so boxed in by my dietary restrictions,” recalls Regan on her website.

After many experiments with gluten-free flours, Regan discovered what she calls the “Master Mix,” which contains brown rice flour, white rice flour, potato starch, tapioca starch, almond meal, sweet rice flour, corn starch and coconut flour. Regan says this formula creates a “good mouth feel” that doesn’t leave a starchy aftertaste, and even her kids are excited to lick the mixing bowl after she bakes.

The original location of Sweet Cake Bake Shop is 237 W. 200 North in Kaysville. The bakery recently opened its second location in downtown Salt Lake City at 457 E. 300 South. On top of the wide selection of cupcakes, Sweet Cake Bake Shop also has cookies, brownies, mini-bundt cakes, breads and rolls, pies and bars.

On the bakery’s website, Regan writes, “Not many people can say they love what they do. Not many can say that what they do brings them happiness (you know, to the depths of your soul kind of happiness.) Not many can say that what they do makes them proud. But I can. This is what Sweet Cake has given me and I hope to others as well.”
