Bon Bon: A Frozen Touch of Europe

By Devin Felix

About 10 years ago, Maxim Morozoff saw an episode of the TV show “The Apprentice” that would eventually change his life. The show that week centered on the ice cream and gelato business, and Morozoff’s interest was piqued. In his travels in Europe, he had been impressed by the taste and aesthetics he found at gelato shops. He also knew that Utah has a record-breaking love of ice cream.

Before long, he was in Las Vegas, enrolled in a weeklong course on making gelato. Then he set to work concocting flavors, focusing on creating a high-quality product like those you’d find in Europe.

Max worked for Larry H. Miller Companies at the time, and in 2009 he began selling his ice creams at the Miller Companies’ Megaplex Theatres. Within six months, sales were so good that other Megaplexes began carrying Bon Bon products. Eventually, Bon Bon began selling at EnergySolutions Arena during Jazz games.

In summer 2013, the Morozoffs opened a Bon Bon shop at Gateway Mall. The store, like the ice cream and gelato sold there, was designed to convey a sense of sophistication and European style. It was designed by Helena Morozoff, Max’s wife, who is an interior designer. Every detail—down to the music that plays and the magazines on the table—is designed to make you feel like you’re in Paris.

The most important detail, of course, is the gelato. Max makes all the ice cream and gelato himself—about 2,000 gallons a month. The Morozoffs return to Europe at least once a year, where they consult with experts and check up on any developments or new trends in the frozen dessert world.

“Every ingredient that goes into it, we try to find the best of the best,” Helena Morozoff says. “It’s those little things that make all the difference.”
